Prep Time

This Instant Pot Chili Beans Recipe takes just a few minutes to prepare. Gather all of the ingredients and have them ready to go before you begin. This includes measuring out the spices, chopping the onion and tomatoes, and draining and rinsing the beans. Once all of the ingredients are ready to go, you can begin cooking in the Instant Pot.

Cook Time

It only takes about 15 minutes for the Instant Pot to pressure cook the chili beans. After the beans are cooked and the pressure is released, it takes an additional 10 minutes for the chili beans to simmer and thicken. All in all, this recipe takes about 25 minutes to complete from start to finish.

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (14.5 ounce) can diced tomatoes
  • 2 (15 ounce) cans black beans, drained and rinsed
  • 1 (15 ounce) can kidney beans, drained and rinsed
  • 1 (4 ounce) can diced green chilies
  • 1 cup chicken broth
  • 1/4 cup freshly chopped cilantro, for garnish

Instructions

2. Add the chili powder, cumin, oregano, smoked paprika, salt, and black pepper to the pot and stir to combine. Cook for another minute until the spices are fragrant.

3. Add the diced tomatoes, black beans, kidney beans, green chilies, and chicken broth to the pot and stir to combine. Place the lid on the Instant Pot, set the valve to sealing, and cook on high pressure for 15 minutes.

4. When the cooking time is done, quick release the pressure and remove the lid. Stir the chili beans and let them simmer for about 10 minutes until they are thickened to your desired consistency.
