Prep Time

This recipe takes just a few minutes to prepare. Start by gathering all the ingredients and chopping the vegetables. Once the vegetables are chopped, the recipe comes together quickly and easily. You will need to allow for the Instant Pot to come to pressure, but the actual cook time is relatively short.

Cook Time

This recipe cooks in just 10 minutes in the Instant Pot. Once the Instant Pot is up to pressure, it will take about 10 minutes to cook the chicken and potatoes to perfection. After the cook time is complete, you will need to allow the Instant Pot to naturally release the pressure, which takes about 10 minutes.

Ingredients

For this recipe you need: 1 lb of boneless, skinless chicken breasts; 2 potatoes, peeled and diced; 1 onion, diced; 2 cloves of garlic, minced; 1 teaspoon of dried oregano; 1 teaspoon of dried basil; 1 tablespoon of olive oil; Salt and pepper to taste; 1 cup of chicken broth; and 2 tablespoons of butter.

Instructions

1. Start by adding the olive oil to the Instant Pot and turn it to the sauté setting. Once the oil is hot, add the diced onions and allow them to cook for 3-4 minutes. Then add the garlic and cook for another minute.
2. Next, add the diced potatoes and season with the oregano, basil, salt, and pepper. Stir everything together and cook for another couple of minutes.
3. Add the chicken broth and butter and stir everything together.
4. Place the chicken breasts on top of the potatoes. Place the lid on the Instant Pot and turn the knob to seal. Cook on high pressure for 10 minutes.
5. Once the cook time is complete, allow the pressure to naturally release for 10 minutes. Then quick release the remaining pressure.
6. Remove the lid and take out the chicken breasts. Shred the chicken and then add it back to the Instant Pot. Stir everything together and serve.

Equipment

For this recipe you need an Instant Pot, a cutting board, a knife, and a spoon or spatula for stirring.
