Ingredients


-1 tablespoon olive oil
-1 onion, chopped
-2 cloves garlic, minced
-4 cups vegetable broth
-1 cup quinoa
-2 cups spinach
-1 teaspoon dried oregano
-Salt and pepper, to taste

Instructions


1. Press the Sauté button on the Instant Pot and wait for it to heat up.
2. Add the olive oil and onion and cook for 3-4 minutes, until the onion is softened.
3. Add the garlic and cook for an additional minute.
4. Add the vegetable broth, quinoa, spinach, oregano, salt, and pepper.
5. Close the lid and set the valve to sealing.
6. Select the Pressure Cook/Manual setting and set the timer to 8 minutes.
7. When the timer goes off, carefully release the pressure and open the lid.
8. Stir the soup and season with additional salt and pepper, if desired.
