Ingredients:

For the crust:

-1 cup whole wheat flour

-1/2 teaspoon salt

-1/2 cup cold butter, cut into small pieces

-2-3 tablespoons cold water

For the filling:

-1 tablespoon olive oil

-1 cup diced onion

-1 cup diced carrots

-1 cup diced celery

-1 teaspoon dried thyme

-1 teaspoon dried oregano

-2 cloves garlic, minced

-1 cup low-sodium chicken broth

-1 cup frozen peas

-2 cups diced cooked chicken

-2 tablespoons cornstarch

-1/4 cup low-fat milk

-1/2 teaspoon freshly ground black pepper

-1/2 teaspoon salt

Instructions:

1. Preheat the oven to 375°F. Grease a 9-inch pie plate with butter or non-stick cooking spray.

2. To make the crust, combine the flour and salt in a medium bowl. Add the butter and use a pastry cutter or two knives to cut the butter into the flour until the mixture resembles coarse crumbs. Add the cold water, 1 tablespoon at a time, and mix until the dough comes together.

3. On a lightly floured surface, roll out the dough into a 12-inch round. Place the dough in the prepared pie plate and crimp the edges. Prick the bottom of the crust with a fork. Place the crust in the refrigerator while you prepare the filling.

4. To make the filling, heat the olive oil in a large skillet over medium-high heat. Add the onion, carrots, celery, thyme and oregano and cook, stirring occasionally, until the vegetables are tender, about 5 minutes. Add the garlic and cook for 1 minute more.

5. Add the chicken broth, peas, chicken, cornstarch, milk, pepper and salt and stir to combine. Bring the mixture to a boil, reduce the heat and simmer for 5 minutes, stirring occasionally, until the mixture thickens. Remove the skillet from the heat and pour the filling into the prepared crust.

6. Bake the pot pie for 25-30 minutes, until the crust is golden-brown and the filling is bubbly. Let cool for 10 minutes before serving.
