Ingredients

  • 1 onion, diced

  • 1 can of black beans, drained and rinsed

  • 1 can of diced tomatoes, undrained

  • 1 teaspoon of cumin
  • 1 teaspoon of paprika
  • 1/2 teaspoon of oregano
  • 1/2 teaspoon of garlic powder
  • 1/2 teaspoon of onion powder
  • Salt and pepper to taste

Instructions

1. Start by setting the Instant Pot to sauté mode. Add in the onions and garlic and cook until the onions are softened and fragrant.

2. Add in the shredded sweet potatoes and cook for a few minutes until they start to soften.

3. Add in the drained and rinsed beans, tomatoes, and all of the spices. Stir everything together.

4. Secure the lid and set the Instant Pot to high pressure for 30 minutes.
