Ingredients

- 4 boneless, skinless chicken thighs

- 8 oz mushrooms, sliced

- 1/2 onion, diced

- 2 cloves garlic, minced

- 1/4 cup white wine

- 1/2 cup chicken broth

- 1/4 cup heavy cream

- 1 tablespoon olive oil

- 1 teaspoon Italian seasoning

- Salt and pepper, to taste

Instructions

1. Set the Instant Pot to the sauté mode. When it is hot, add the olive oil.

2. Add the chicken thighs and cook for about 5 minutes until lightly browned.

3. Add the mushrooms, onions, and garlic and cook for about 3 minutes until the mushrooms are softened.

4. Add the white wine and deglaze the pot.

5. Add the chicken broth, Italian seasoning, salt, and pepper.

6. Place the lid on the Instant Pot and set to manual mode for 8 minutes.

7. When the time is up, release the pressure and carefully remove the lid.

8. Turn the Instant Pot to the sauté mode and add the heavy cream.

9. Simmer for 5 minutes until the sauce has thickened.

10. Serve with your favorite side dishes and enjoy!

Notes

This dish can be made with any type of mushrooms. Try using cremini mushrooms, shiitake mushrooms, or even portobello mushrooms.
