Description

Boston baked beans are a classic dish that’s been enjoyed for decades. This recipe uses an Instant Pot to make the perfect batch of baked beans. It’s an easy to make dish that’s full of flavor. Great as a side dish, or as the main dish, these beans are sure to be a hit with your family. The combination of spices, vegetables, and bacon give these beans a rich, smoky flavor that will have your family asking for seconds.

Prep Time

This recipe takes about 5 minutes of prep time to get everything ready for the Instant Pot. You’ll need to soak the beans overnight, so it’s best to plan ahead for this. After the beans have soaked, it’s easy to get everything together for the Instant Pot.

Cook Time

The cook time for this recipe is 30 minutes. This includes the time it takes for the Instant Pot to come up to pressure, as well as the actual cooking time. The beans will come out perfectly cooked and full of flavor. You’ll know they’re done when the beans are soft and the sauce has thickened.

Ingredients

  • 1 lb dry navy beans
  • 2 cups chicken broth
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1/2 lb bacon, diced
  • 2 tablespoons molasses
  • 2 tablespoons brown sugar
  • 1 teaspoon ground mustard
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper

Instructions

1. Soak the beans overnight in a large bowl of cold water.

2. Drain and rinse the beans, then set aside.

3. Place the Instant Pot on the sauté setting and add the bacon. Cook until the bacon is crispy, about 5 minutes.

4. Add the onion and garlic and cook until the onion is translucent, about 2 minutes. Add the chicken broth, then scrape the bottom of the pot to remove any bits that may have stuck.

5. Turn off the sauté setting and add in the beans, molasses, brown sugar, ground mustard, salt, pepper, smoked paprika, and cayenne pepper. Give everything a stir.

6. Place the lid on the Instant Pot and set the valve to sealing. Set the Instant Pot to manual high pressure for 30 minutes.

7. When the cook time is finished, let the pressure release naturally for 10 minutes, then do a quick release. Carefully open the lid and stir the beans.

8. Serve warm and enjoy!

Equipment

  • Instant Pot
  • Measuring cups and spoons
  • Large bowl

Notes

Be sure to adjust the seasonings to taste. If you like your beans spicier, add more cayenne pepper. If you like your beans sweeter, add more brown sugar. If you like your beans more smoky, add more smoked paprika.

Recipe Tips

If you’re short on time, you can use canned beans instead of dry beans. However, using dry beans will give you the best flavor. Also, if you don’t have an Instant Pot, you can make this recipe on the stovetop. Just simmer the beans for about 2 hours, stirring occasionally, until the beans are cooked and the sauce has thickened.

This recipe makes a great side dish for barbecues, potlucks, or any other gathering. It’s also a great meal on its own. Serve it with a side of cornbread and you’ll have a delicious, hearty meal. Enjoy!
