Ingredients
- 2 large eggplants

- 2 tablespoons of olive oil
- 1 cup of water

Instructions
1. Start by prepping the eggplants. Peel them and cut them into 1-inch cubes. Place the cubes in a bowl and set aside.
2. Heat the olive oil in the Instant Pot on the sauté setting. Add the onion, garlic, and ginger. Sauté for about 3 minutes, or until the onion is soft and translucent.
3. Add the cumin powder, coriander powder, and garam masala. Stir and sauté for an additional minute.
4. Add the eggplant cubes and stir to combine. Sauté for another 3 minutes.
5. Add the water, salt, and pepper. Give everything a good stir and close the lid of the Instant Pot. Make sure the valve is set to sealing.
6. Set the Instant Pot to manual high pressure for 8 minutes. When the cooking time is done, carefully do a quick release of the pressure.
7. Open the lid of the Instant Pot and give everything a good stir. Taste and adjust seasoning if needed.
8. Garnish with chopped cilantro and serve.

Notes
