Homemade Hot Pot Recipe
Description

Ingredients
- 1/2 pound beef, sliced into thin strips
- 1/2 pound pork, sliced into thin strips
- 1/2 pound chicken, sliced into thin strips
- 1/2 pound shrimp, peeled and deveined
- 1/2 pound firm tofu, cubed
- 2 cups sliced mushrooms
- 2 cups sliced bok choy
- 1 cup sliced carrots
- 1 cup sliced celery
- 1 cup sliced bell peppers
- 1 package rice noodles
- 1/4 cup soy sauce
- 2 tablespoons sesame oil
- 1 teaspoon ground ginger
- 8 cups chicken or vegetable broth
- Salt and pepper to taste
- Optional: 2 tablespoons chili paste or hot sauce
Instructions
In a large pot, heat the sesame oil over medium heat. Add the beef, pork, chicken, shrimp, and tofu to the pot and cook until the meat is lightly browned. Add the mushrooms, bok choy, carrots, celery, bell peppers, and rice noodles to the pot and stir to combine. Add the soy sauce, ground ginger, broth, and chili paste (if using). Bring the mixture to a boil and then reduce the heat to low and simmer for 15-20 minutes until the vegetables are tender and the noodles are cooked through.
Season the hot pot with salt and pepper to taste. Serve the hot pot in individual bowls with additional soy sauce, sesame oil, and chili paste (if desired). Enjoy!

Notes
