Instructions

1. Place the chicken breasts in the bottom of the Instant Pot. Sprinkle the Italian seasoning, garlic powder, smoked paprika, salt, and pepper over the chicken.

2. Add the diced onion, garlic, bell pepper, baby carrots, and frozen peas to the Instant Pot. Pour in the chicken broth and stir to combine.

3. Place the lid on the Instant Pot and set it to "Manual" or "Pressure Cook" for 20 minutes. Make sure the valve is set to "Sealing".

4. Once the cooking time is up, let the pressure release naturally for 10 minutes, then quick-release the remaining pressure. Carefully open the lid and stir the contents of the pot.

5. Serve the chicken and veggies over rice, quinoa, or your favorite grain.
