Ingredients

- 2 tablespoons olive oil

- 2 carrots, diced
- 2 celery stalks, diced
- 4 cups chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 bay leaf
- Salt and pepper, to taste
- 2 tablespoons fresh parsley, chopped

Instructions

1. Start by selecting the “Sauté” setting on the Instant Pot. Add the olive oil and let it heat up.
2. Add the chicken and garlic and cook until the chicken is lightly browned.
3. Add the onion, carrots, and celery and cook until the vegetables are tender.
4. Add the chicken broth, thyme, oregano, bay leaf, salt, and pepper.
5. Secure the lid and set the valve to “Sealing”. Select the “Manual” setting and set the cooking time to 20 minutes.
6. When the cooking time is up, quick release the pressure.
7. Remove the bay leaf and stir in the fresh parsley.
8. Serve the soup hot. Enjoy!
