Ingredients

Instructions
1. Turn on the Instant Pot and select the “Saute” setting. Heat the olive oil and add the onion and garlic. Saute until the onion is softened, about 3 minutes. Add the tomato paste, cumin, paprika, salt, and pepper and stir to combine.
2. Add the rice and stir to coat in the spices. Pour in the chicken broth and stir to combine. Add the chicken breasts and gently press them into the liquid. Secure the lid and turn the pressure release valve to the “Sealing” position.
3. Select the “Manual” or “Pressure Cook” setting and set the timer to 8 minutes. Once the timer goes off, turn off the Instant Pot and allow the pressure to naturally release for 10 minutes. Carefully move the pressure release valve to the “Venting” position and release the remaining pressure. Open the lid and fluff the rice with a fork.
4. Transfer the chicken breast to a cutting board and shred with two forks. Return the chicken to the Instant Pot and stir to combine. Sprinkle with fresh parsley and serve warm.
