Ingredients
- 1 pound boneless, skinless chicken breasts
- 1 teaspoon olive oil
- 1/2 onion, diced
- 3 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- 1/2 teaspoon oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup chicken broth
- 1 head cauliflower, riced
- 1/4 cup cilantro, chopped
Instructions
1. Turn the Instant Pot on to the sauté setting. Add the olive oil, onion, garlic, smoked paprika, cumin, oregano, salt and pepper. Sauté for 4-5 minutes, until the onion is soft.
2. Add the chicken broth to the Instant Pot, then add the chicken breasts. Close the lid and set the valve to sealing. Cook on high pressure for 5 minutes.
3. When the cooking time is finished, quick release the pressure. Remove the lid and use tongs to transfer the chicken breasts to a cutting board. Shred the chicken, then return it to the Instant Pot.
4. Add the riced cauliflower to the Instant Pot and stir to combine. Close the lid and set the valve to sealing. Cook on high pressure for 2 minutes.
5. Quick release the pressure, then open the lid. Stir in the chopped cilantro and season to taste with salt and pepper.
