Ingredients
- 2 cans (14.5 ounces each) diced tomatoes
- 1/4 cup chopped onion
- 2 cloves garlic, minced
- 1 jalapeño, diced
- 2 tablespoons lime juice
- 2 tablespoons chopped cilantro
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 teaspoon sugar
- 1/2 teaspoon salt
Instructions
1. Press the “Sauté” button on an Instant Pot. When the pot is hot, add the onion and jalapeño and cook, stirring occasionally, until softened, about 3 minutes. Add the garlic and cook for another minute.
2. Add the diced tomatoes, lime juice, cilantro, cumin, chili powder, sugar, and salt. Give the mixture a good stir and then press the “Cancel” button.
3. Secure the lid on the Instant Pot and make sure the vent is in the “Sealing” position. Press the “Manual” button and adjust the time to 5 minutes. When the cooking cycle is finished, allow the pot to naturally release the pressure for 10 minutes.
4. When the pressure has been released, carefully open the lid and use an immersion blender to blend the salsa until it reaches the desired consistency. If the salsa is too thick, add a little water to thin it out.
5. Serve the salsa warm or refrigerate it in an airtight container until ready to use.
