Cook Time

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced

  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon thyme
  • 2 cups beef broth
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons all-purpose flour
  • 1/4 cup cold water

Instructions

1. Set the Instant Pot to the “Sauté” function and heat the olive oil. Add the onions and garlic and cook for 2-3 minutes.

2. Add the beef, carrots, potatoes, salt, pepper, paprika, and thyme. Stir to combine and cook for 3-4 minutes.

3. Pour in the beef broth, tomato paste, and Worcestershire sauce. Stir to combine.

4. Close the lid of the Instant Pot and set the valve to “Sealing”. Set the Instant Pot to “Manual” for 30 minutes.

5. When the cooking time is complete, carefully release the valve and open the lid.

6. To thicken the stew, whisk together the flour and cold water. Pour the mixture into the Instant Pot and stir to combine.

7. Close the lid and set the valve to “Venting”. Let the stew cook for an additional 5 minutes.

8. When the cooking time is complete, carefully release the valve and open the lid.

9. Serve the stew hot with crusty bread. Enjoy!
