Instructions

To get started, set your Instant Pot to the “Saute” setting. Add the olive oil and let it heat up for 1-2 minutes. Add the onion and garlic and sauté for about 5 minutes, stirring occasionally. Once the onion is softened and lightly browned, add the bell pepper and sauté for another 3-4 minutes. Now add all of the spices – chili powder, cumin, smoked paprika, cayenne, salt and pepper – and stir to combine.

Next, add the beans, corn, diced tomatoes and vegetable broth. Stir to combine and make sure everything is mixed together. Secure the lid on the Instant Pot and set the “Manual” setting to 10 minutes. Once the timer goes off, carefully release the pressure valve and open the lid. Add the lime juice and stir to combine.

Your Instant Pot Bean Chili is now ready to serve! You can enjoy the chili as is, or top it with your favorite toppings such as shredded cheese, diced avocado, jalapeno slices or sour cream. Enjoy!
