Butter Chicken

Ingredients:



-2 pounds boneless, skinless chicken, cut into cubes
-2 tablespoons olive oil
-1 onion, chopped
-2 cloves garlic, minced
-1 tablespoon grated ginger
-1 teaspoon garam masala
-1 teaspoon ground coriander
-1 teaspoon ground cumin
-1/2 teaspoon turmeric
-1/2 teaspoon red chili powder
-1/2 teaspoon salt
-1/2 cup plain yogurt
-1 cup tomato sauce
-1/2 cup heavy cream
-2 tablespoons butter
-1/4 cup chopped cilantro, for garnish

Instructions:



1. Turn the Instant Pot to the sauté setting and add the olive oil. When the oil is hot, add the onion and garlic and cook for 2 minutes until softened.

2. Add the ginger and all of the spices and cook for another minute.

3. Add the chicken and stir to combine. Cook for 2 minutes until the chicken is lightly browned.

4. Add the yogurt and stir to combine. Cook for another minute.

5. Add the tomato sauce and stir to combine. Place the lid on the Instant Pot and set the valve to “sealing”.

6. Cook on high pressure for 8 minutes. When the cooking time is finished, quick release the pressure.

7. Stir in the cream and butter and let the mixture simmer for 2 minutes.

8. Serve the butter chicken over cooked rice and garnish with cilantro.

Notes:



You can use chicken thighs instead of chicken breasts if desired. If you prefer a spicier dish, you can add more chili powder to taste.
