Description

A hot shredded chicken sandwich is an easy and delicious way to enjoy a meal. This crock pot recipe is great for busy weeknights or lazy weekends. With just a few simple ingredients, you can have a delicious and flavorful meal in no time. The slow cooker does all the hard work for you, so all you have to do is sit back and relax while you wait for your meal to finish cooking. The slow cooker also helps to lock in the moisture, so you’re left with juicy and tender chicken that’s full of flavor.

Prep Time

This recipe doesn’t take a lot of time to assemble and prepare. All you have to do is mix together the ingredients and dump them into the crock pot. You’ll need to give the chicken a quick sear before adding it to the pot, but that only takes a few minutes. Once everything is in, you can set the timer and forget about it until it’s time to serve.

Cook Time

This crock pot recipe only needs to cook for a few hours, so you could make it in the morning and have it ready for dinner. You can choose to cook the chicken on low heat for 6-8 hours or high heat for 3-4 hours. The shorter the cooking time, the more tender the chicken will be. If you have the time, I recommend cooking it on low heat for the full 8 hours for the best results.

Ingredients

For this recipe, you’ll need:

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons of olive oil
  • 1 teaspoon of garlic powder
  • 1 teaspoon of paprika
  • 1 teaspoon of onion powder
  • Salt and pepper to taste
  • 1 cup of chicken broth
  • 4 hamburger buns
  • Shredded lettuce
  • Sliced tomatoes
  • Sliced red onions
  • Your favorite condiments (mayonnaise, mustard, ketchup, etc.)

Instructions

To make the chicken, start by seasoning the chicken breasts with the garlic powder, paprika, onion powder, salt and pepper. Heat the olive oil in a large skillet over medium-high heat. Once the skillet is hot, add the chicken and cook for 3-4 minutes per side, or until the chicken is lightly browned on both sides. Transfer the chicken to the crock pot and pour the chicken broth over top.

Cover the pot and set the timer for 6-8 hours on low heat or 3-4 hours on high heat. When the chicken has finished cooking, use two forks to shred the chicken in the pot. Give it a stir to make sure the chicken is evenly coated with the juices.

To assemble the sandwiches, place a large scoop of the shredded chicken onto the bottom of a hamburger bun. Top it with lettuce, tomatoes, onions and your favorite condiments. Serve hot.

Equipment

For this recipe, you’ll need a large skillet, a crock pot and a pair of forks.

Notes

This recipe is great for meal prepping. You can make the chicken in the crock pot, then assemble the sandwiches later in the week. The chicken will keep in the fridge for up to 4 days. You can also freeze the chicken for up to 3 months. Just make sure to thaw it in the refrigerator overnight before reheating.

Recipe Tips

Feel free to use any type of chicken for this recipe. Dark meat is great for slow cooking and will give you a juicier, more flavorful chicken. You can also add other seasonings to the chicken such as chili powder, cumin, oregano, or cayenne pepper for a more flavorful dish. For a healthier option, you can use whole wheat buns or lettuce wraps instead of traditional hamburger buns.

You can also switch up the toppings for the sandwiches. Try adding sliced avocado, pickles, jalapenos, or any other toppings you like. You can also add melted cheese to the sandwiches for an extra cheesy kick. Get creative and have fun with it!
