Basic Beef Stew

Description:


This Basic Beef Stew is a comforting and hearty meal that is sure to please the whole family. It's made with simple ingredients like beef, potatoes, carrots, and herbs, and it's cooked to perfection in the Instant Pot.

Ingredients:


- 2 pounds of beef stew meat, cubed
- 2 tablespoons of olive oil
- 6 cups of beef broth
- 2 large carrots, peeled and diced
- 2 stalks of celery, diced
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 teaspoon of dried thyme
- 1 teaspoon of dried oregano
- 2 bay leaves
- 2 large potatoes, peeled and cubed
- Salt and pepper to taste
- 2 tablespoons of cornstarch
- 2 tablespoons of cold water

Instructions:


1. Set the Instant Pot to the “Sauté” setting and add the olive oil. Once the oil is hot, add the beef stew meat and brown for about 5 minutes, stirring occasionally.
2. Add the beef broth, carrots, celery, onion, garlic, thyme, oregano, bay leaves, and potatoes to the Instant Pot. Stir to combine.
3. Place the lid on the Instant Pot and set the valve to the “Sealing” position. Cook on high pressure for 35 minutes.
4. When the cooking time is up, quick release the pressure and remove the lid.
5. In a small bowl, whisk together the cornstarch and cold water. Slowly add the cornstarch mixture to the stew and stir until thickened.
6. Serve the stew hot and enjoy!
