Ingredients
- 2 tablespoons extra virgin olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 2 cans (14.5 ounces each) diced tomatoes
- 2 cups vegetable broth
- 1/4 cup fresh basil, chopped
- Salt and pepper, to taste
- Optional: shredded cheese and/or sour cream, for topping
Instructions
1. Turn the Instant Pot to the sauté setting. Add the olive oil and onion and sauté for about 2 minutes, until the onion is softened.
2. Add the garlic and sauté for an additional minute.
3. Add the diced tomatoes, vegetable broth, and basil. Stir to combine.
4. Secure the lid and turn the valve to the “sealing” position. Select “soup” or “manual” setting and set the timer for 10 minutes.
5. When the timer is done, carefully turn the valve to the “venting” position to release the pressure.
6. Remove the lid and use an immersion blender to blend the soup until it is smooth.
7. Season with salt and pepper to taste. Serve with shredded cheese and/or sour cream, if desired.
