Delicious Chicken Pot Pie Recipe

This version is a classic with a simple, creamy and flavorful filling, topped with a puff pastry crust, that is sure to be a hit with the entire family. This cozy and comforting dish is the perfect weekend dinner for a chilly evening. It can easily be made ahead of time and frozen, so you can enjoy it anytime.
Prep Time
This delicious chicken pot pie recipe takes approximately 15 minutes to prep and 45 minutes to cook.
Ingredients
For the filling:
• 1 tablespoon olive oil
• 1 large onion, diced
• 2 cloves garlic, minced
• 2 carrots, diced
• 2 celery stalks, diced
• 2 cups cooked chicken, diced
• 1/3 cup all-purpose flour
• 2 cups chicken broth
• 1/2 cup frozen peas
• 1/2 cup frozen corn
• 1/4 cup chopped fresh parsley
• 2 tablespoons butter
• 2 tablespoons heavy cream
• Salt and pepper, to taste
• 1 sheet puff pastry, thawed
For the topping:
• 1 egg, beaten
• 2 tablespoons milk
• 1 teaspoon sesame seeds
Instructions
1. Preheat oven to 375°F (190°C).
2. Heat olive oil in a large skillet over medium heat. Add onion, garlic, carrots and celery and cook until softened, about 5 minutes. Add chicken and cook until heated through, about 3 minutes.
3. Add flour and stir until combined. Slowly add chicken broth, stirring constantly, until combined. Bring to a simmer and cook until thickened, about 5 minutes.
4. Add peas, corn, parsley, butter and cream. Stir until combined and season with salt and pepper, to taste. Transfer to a 9-inch pie dish.
5. Cut puff pastry into a 9-inch round and place over the top of the chicken pot pie. Cut a few slits in the top to allow steam to escape.
6. In a small bowl, whisk together egg and milk. Brush over puff pastry. Sprinkle with sesame seeds.
7. Bake for 25-30 minutes, or until top is golden brown and filling is bubbling. Let cool for 10 minutes before serving.
