Description

Nothing hits the spot quite like a bowl of hearty, warm, and comforting chicken noodle soup. You can make it quickly on the stove top or slow cook it in the crock pot for a cozy meal. This crock pot chicken noodle soup is packed with vegetables, chicken, and noodles for a delicious dinner that will make the whole family happy. In addition to being delicious, it's also easy to make with just a few minutes of prep time.

Prep Time

This comforting chicken noodle soup doesn't take too long to get ready. The overall prep time is about 10 minutes. All you need to do is chop the vegetables, dice the chicken, and measure out the other ingredients. You can even get the kids involved to help speed things up.

Cook Time

Once the ingredients are all prepped and the soup is assembled in the crock pot, it will need to cook for about 4-5 hours on high or 8-10 hours on low. It's best to check the chicken and noodles once the soup is finished to make sure they are cooked through. If they need more time, simply turn the crock pot to low and let them cook a bit longer.

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 8 cups chicken broth
  • 2-3 boneless, skinless chicken breasts
  • 1 cup dry egg noodles
  • salt and pepper, to taste

Instructions

To get started, heat the olive oil in a large skillet over medium heat. Add in the diced onion, carrots, celery, and garlic and cook until the vegetables are tender, about 5 minutes. Add in the thyme, parsley, and a pinch of salt and pepper and cook for another minute. Transfer the vegetables to the crock pot.

Next, add the chicken broth and chicken breasts to the crock pot. Cover and cook on high for 4-5 hours or low for 8-10 hours. Once the chicken is cooked through, remove the chicken from the crock pot and shred it with two forks. Return the shredded chicken to the crock pot.

Add the egg noodles and cook for an additional 20 minutes or until the noodles are cooked through. Taste and adjust the seasoning with salt and pepper, as needed. Serve the soup warm with crusty bread or crackers.

Equipment

  • Large skillet
  • Crock pot

Notes

This soup can easily be customized to fit your taste. Feel free to add in different vegetables such as potatoes, spinach, or mushrooms. You can also substitute the chicken broth for vegetable broth to make a vegetarian version. If you prefer more broth, simply add in a bit more.
