Ingredients

  • 4 cups cooked black beans (or 2 cans, drained and rinsed)
  • 1/4 cup olive oil
  • 1 small onion, diced
  • 1 red pepper, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup tomato paste
  • 2 cups vegetable broth
  • 1 bay leaf
  • 1/4 cup fresh cilantro, chopped (optional)
  • Lime wedges, for serving (optional)

Instructions

1. Set the Instant Pot to the sauté setting and heat the olive oil.

2. Add the onions, peppers and garlic, and cook for 3-4 minutes, until the vegetables are soft.

3. Add the cumin, smoked paprika, oregano, salt, and pepper, and stir to combine.

4. Add the tomato paste and stir to combine.

5. Add the black beans and vegetable broth and stir to combine.

6. Place the bay leaf on top and close the lid.

7. Set the Instant Pot to manual high pressure for 20 minutes.

8. When the cooking time is finished, allow the pressure to naturally release for 10 minutes, then do a quick release.

9. Remove the bay leaf and stir in the cilantro, if using.

10. Serve the black beans with lime wedges, if desired.
