Prep Time
This recipe takes about 20 minutes to prepare and then the Instant Pot does the rest of the work in about 20 minutes. Total prep and cook time is about 40 minutes.
Ingredients
• 1 tablespoon of olive oil
• 1 pound of sausage
• 1 pound of boneless, skinless chicken thighs
• 1 onion, diced
• 2 celery stalks, diced
• 2 cloves of garlic, minced
• 1 cup of uncooked white rice
• 2 tablespoons of tomato paste
• 1 teaspoon of dried oregano
• 1 teaspoon of dried thyme
• 1 teaspoon of smoked paprika
• 1 teaspoon of cayenne pepper
• 1 (14-ounce) can of diced tomatoes
• 4 cups of chicken broth
• 2 bay leaves
• 1 teaspoon of Worcestershire sauce
• 1 teaspoon of hot sauce
• 1/2 teaspoon of sea salt
• 1/4 teaspoon of freshly ground black pepper
• 2 tablespoons of chopped fresh parsley, for garnish
Instructions
1. Press the “Sauté” button on the Instant Pot and add the olive oil. Once the oil is hot, add the sausage and cook for about 5 minutes, stirring often. Add the chicken, onion, celery, and garlic and cook for an additional 5 minutes, stirring often. Add the rice, tomato paste, oregano, thyme, paprika, and cayenne pepper and stir until everything is evenly combined.
2. Add the diced tomatoes, chicken broth, bay leaves, Worcestershire sauce, hot sauce, salt, and pepper and stir. Place the lid on the Instant Pot and make sure the valve is set to “Sealing”. Press the “Manual” button and set the timer to 15 minutes. When the timer is done, quick release the pressure.
3. Remove the lid and stir in the parsley. Serve the gumbo with a side of rice and enjoy!
