Prep Time

This recipe requires 10 minutes of preparation time. This includes preparing the ingredients, such as washing the chicken, chopping the vegetables, and measuring the spices and herbs. Once everything is prepped, the Instant Pot will do the rest of the work.

Cook Time

This recipe takes approximately 15 minutes to cook. The Instant Pot will do all the work for you and can be programmed to cook for the desired time. Once the time is up and the Instant Pot has finished cooking the meal, it will automatically switch off.

Ingredients

  • 1 whole chicken
  • 2 carrots, peeled and chopped
  • 1 onion, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 3 tablespoons apple cider vinegar
  • 2 quarts chicken stock
  • Salt and pepper to taste

Instructions

1. Start by placing the chicken in the inner pot of the Instant Pot. Add the carrots, onion, celery, garlic, bay leaves, thyme, oregano, and apple cider vinegar. Pour the chicken stock over the top.

2. Secure the lid and set the vent to the sealing position. Select the "Soup/Stew" setting and set the cooking time for 15 minutes. Once the cooking time is up, allow the Instant Pot to naturally release the pressure for 10 minutes before carefully releasing the remaining pressure.

3. Once all of the pressure has been released, remove the lid and remove the chicken from the pot. Place the chicken onto a cutting board and remove the skin and bones. Shred the chicken and return it to the pot. Discard the skin and bones.

4. Taste the broth and add salt and pepper as needed. Serve the broth with the shredded chicken or store in the refrigerator for up to 4 days.

Equipment

  • Instant Pot
  • Cutting board
  • Knife
  • Measuring cups and spoons

Notes

This recipe can easily be adapted for a vegetarian version by omitting the chicken and using vegetable stock instead of chicken stock. For a vegan version, use a vegan broth and leave out the chicken. You can also add additional vegetables, such as mushrooms, bell peppers, and zucchini.
