Aloo Gobi (Potato and Cauliflower Curry)

Ingredients:

  • 2 tablespoons vegetable oil

  • 1 large potato, cut into 1-inch cubes
  • 1 large cauliflower, cut into 1-inch florets
  • 1 cup tomato puree
  • 1 cup vegetable broth
  • Salt, to taste
  • 2 tablespoons chopped fresh cilantro

Instructions:

  1. Set the Instant Pot to sauté mode and heat the oil. Add the cumin seeds and fry for 30 seconds.
  2. Add the turmeric, onion, garlic, ginger, garam masala, coriander, cumin, cardamom, cinnamon, and cayenne pepper. Sauté for 3 minutes.
  3. Add the potato, cauliflower, tomato puree, vegetable broth, and salt. Stir to combine.
  4. Secure the lid and set the Instant Pot to manual high pressure for 3 minutes. Quick release the pressure when done.
  5. Stir in the cilantro and serve.

Notes:
